Your pasta is preserved through the process of fermentation. Because of this, both the dough and filling are alive... so they will continue to ferment until eaten. We ship our pastas with icepacks to slow down the fermentation process...but be aware, the icpacks are not for preservation, the food is ALIVE and needs no additional preservation. please refrigerate your pasta upon arrival, and do not be alarmed if your pasta arrives with icepacks thawed.

This is the ONLY WAY to get my Sourdough Pasta. It's not at farmers markets and it's not at grocery stores.
HOW TO COOK YOUR LIVE SOURDOUGH RAVIOLI
1. Bring a pot of water to a rolling boil.
2. Remove your ravioli from the package.
3. Once the water is boiling, gently drop the pasta into the water and begin gently mixing with a wooden spoon. Do not let them sit on the bottom of the pot.
4. Mix gently.
5. The ravioli will GROW and start to FLOAT!!!
The pasta color will change from off-white to a more golden color.
6. Wait one to two minutes after they float and then taste a ravioli. It should be "snappy".
7. Scoop the ravioli out of the water with a sieve or spoon.
9. Top the ravioli with your favorite sauce and enjoy!
